Został stworzony około 1830 roku przez Antoine Amédée Peychaud oraz Creole, aptekarzy z francuskiej kolonii San Domingo (obecnie Haiti), którzy osiedlili się w Nowym Orleanie w 1795 roku. Jest to goryczkowy likier, porównywalny do Angostury, ale z lżejszą cierpkością, posiada słodszy smak i więcej kwiatowy aromatów. Peychaud Bitter jest ważnym składnikiem koktajlu Sazerac.
